Banana Berry Baked Oatmeal

This banana berry baked oatmeal is a yummy and healthy breakfast that Damian and I eat often. I recommend baked oatmeal to anyone who isn’t a fan of oatmeal, because I never was until I first tried baked oatmeal. Though this recipe takes a while to bake, the hands-on time is very short and easy.

Each of the ingredients in this recipe has many studied health benefits that I encourage you to look into if you haven’t before and here are a couple of recent things that I have learned that I think are really cool.

Oats can help us to detox forever chemicals much faster.

Turmeric can help us to detox arsenic as well as reverse DNA damage caused by arsenic.

We are frequently exposed to “forever chemicals” (PFAS) and arsenic and both are shown to cause many health issues, including cancer, so getting these out of our bodies and quickly is important!

Banana Berry Baked Oatmeal

Servings: 6

  • 6 Tbsp Ground Flaxseed
  • 1.5 c of water
  • 9 Bananas (6 of these are for topping)
  • 1/2 Tbsp Turmeric
  • 1/2 Tbsp Ground Ginger
  • 1 Pinch of Black Pepper
  • 1/2 Tbsp Baking Powder
  • 1 can of Coconut Milk
  • 3 cups of Rolled Oats
  • 3 cups of Berries of your choice
  • Optional: extra toppings such as chopped nuts, more fruit, chocolate chips, etc…

Preheat the oven to 375 degrees F. If it is cold, I like to put the can of coconut milk in the oven while it preheats to help make it all liquid so there aren’t any chunks.

Mix the ground flaxseeds with the water and set aside. Peel and mash 3 of the bananas in a large mixing bowl. Add the turmeric, ginger, pepper, baking powder, and water/flaxseed mixture and mix thoroughly. Stir in the coconut milk. Stir in the oats until just mixed. Fold in the berries. Pour the mixture into a baking dish – the one in my pictures is 12×8 inches, but it is a bit full so I would recommend a 13×9 inch pan.

Place in the oven and bake for 50 minutes, or until the edges are starting to brown. Let sit for 10 – 15 minutes before cutting and serving to help it set. Top each serving with 1 sliced banana as well as any other topping that you wish and enjoy!
